Why does bread dough rise?

Yeast produces gas inside dough.

The short answer

In dough with baker’s yeast, these microorganisms use sugars and produce carbon dioxide during fermentation. Trapped bubbles of gas help the stretchy dough expand.

An example to make sense of it

Many holes in the crumb come from those bubbles. Biological yeast and chemical raising agents generate gas through different processes.
